Fresh cherry tomatoes, red onion, basil, and tangy feta cheese give this Farro Tomato Salad a lot of flavor. It's also good for you. It's great as a side dish or as a light meal.
Ingredients:
- 1 cup farro
- 2 cups cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh basil leaves, chopped
- 1/4 cup feta cheese, crumbled
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions:
Follow the directions on the package to cook the farro until it is soft
Take it out and let it cool down
Cook the farro and put it in a large bowl
Add the cherry tomatoes cut in half, the red onion chopped up, and the fresh basil leaves
Very good olive oil and balsamic vinegar should be mixed together in a small bowl using a whisk
Add pepper and salt to taste
Pour the dressing over the salad and mix it all together
Crumble the feta cheese and sprinkle it on top of the salad
