Ingredients:
- 4 cups leftover turkey, shredded
- 8 cups turkey or chicken broth
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon dried sage
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions:
In a large pot, heat olive oil over medium heat
Add diced onion, carrots, and celery
Cook until vegetables are softened, about 5 minutes
Add minced garlic, thyme, rosemary, sage, and bay leaf
Cook for another minute
Pour in turkey or chicken broth and bring to a simmer
Add shredded turkey to the pot
