Ingredients:
- 500g boneless chicken, cut into bite-sized pieces
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 1 tablespoon vegetable oil
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 medium onion, thinly sliced
- 3 cloves garlic, minced
- 1 teaspoon ginger, minced
- 2 tablespoons cornstarch
- 1/4 cup water
- Salt and pepper to taste
- Cooked rice for serving
Instructions:
In a small bowl, mix soy sauce and honey
Set aside
In a separate bowl, combine cornstarch and water to make a slurry
Set aside
Heat vegetable oil in a large skillet or wok over high heat
Add the chicken pieces and stir-fry until they turn golden brown and are cooked through
Remove from the skillet and set aside
In the same skillet, add a bit more oil if needed, and then add garlic and ginger
Saut for about 30 seconds until fragrant
Add sliced onions and bell peppers to the skillet
Stir-fry for 2-3 minutes until they begin to soften
Return the cooked chicken to the skillet and pour in the soy sauce and honey mixture
Stir-fry for an additional 2-3 minutes until everything is well coated and heated through
Pour in the cornstarch slurry and stir continuously until the sauce thickens, about 1-2 minutes
Season with salt and pepper to taste
Adjust the sweetness or saltiness by adding more honey or soy sauce if desired
Serve the addictive honey chicken stir fry over cooked rice
Garnish with sesame seeds or green onions if desired
