Ingredients:
- 3 lbs beef chuck roast
- 1 cup beef broth
- 1 onion, quartered
- 3 carrots, chopped
- 3 potatoes, diced
- 2 cloves garlic, minced
- 2 tbsp tomato paste
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
Instructions:
Season the chuck roast with salt and pepper
Turn on the Instant Pot and select 'Saute
' Add olive oil and sear the roast on all sides until browned
Remove the roast and set aside
Saute onions and garlic until softened
Stir in tomato paste, thyme, and rosemary
Place the roast back into the Instant Pot
Add beef broth, carrots, and potatoes
Secure the lid, set to 'Manual' for 60 minutes
Once done, allow natural pressure release for 10 minutes
Release any remaining pressure and open the lid
